Rahr unmalted wheat is a raw wheat grain that hasn't been malted - perfect for some traditional styles like Wit and Lambic. It adds a ton of mouth-feel and provides a very cloudy finished beer when used in a Wit or Hefeweizen. As the wheat has no diastatic power on its own, a multi-step or decoction mash is recommended. A protein rest is highly recommended if used in mashing. Unmalted Wheat is for use in producing authentic Belgian styles.
