SENTRY III CONTROL SYSTEM FEATURES

  • HUMIDITY & INSTALLATION: By the nature of their operation, wine cooling units will maintain a stable humidity level, lower than the relative ambient humidity. In situations where the ambient humidity is high, the cooling unit will lower the humidity to desirable storage levels. In situations where the ambient relative humidity is very low, the desired enclosure relative humidity may not be achieved without adding moisture. To add moisture to the enclosure only use slow, natural evaporation from a small porous water container. Do not use a humidifier.


  • TEMPERATURE & INSTALLATION: These wine cellar cooling units are designed to cool 25 degrees less than the ambient temperature of the venting side of the unit. In some cases, improper placement or installation may cause the unit's performance to be degraded. The condensing unit must have a constant supply of fresh air, less than 85 degrees F. If the condensing unit is located in a confined area with poor ventilation, the unit will not be able to reject the heat it is removing from the enclosure and a malfunctioning unit will be suspected, even though the unit is mechanically sound.     The ideal temperature for storing and aging wine is between 50° and 60° Fahrenheit. Each BREEZAIRE system includes an adjustable thermostat that makes it possible for the user to precisely control the conditions in the wine cellar. When initially bringing the temperature down to the desired level and in maintaining the target temperature, the system produces a gentle stream of cool air - never a blast of cold air that could subject the wine to abrupt temperature changes.

    Humidity must be present in the wine cellar to prevent cork and label deterioration. The gentle cooling action of the BREEZAIRE system maintains the relative humidity in the 50% to 75% range, eliminating excess moisture but never allowing the air to become dry enough to create an undesirable condition. (Additional moisture may be required in extreme dry climates.)

Compromises: Relationships not Wine

I have owned 4 since 1997..... for all of you who are old enough to have watched Bonanza....this unit is a Hoss. One Caveat: Run it, Run it, Run it.....I have two incase one breaks down (I live is the sub-topics.....South Texas)....my only break down....is the back up....my primary unit is 10 years and running.....now you may get a $100 board or other little item to replace....but these things are made to run, run, run. You can't build and cool a wine cellar of 1000 SF for any less...NOT possible.....and I have built two.

This is my fourth Breezaire cooler. Two other cellars over the years and the second one in my present cellar. As a result of my experience, I believe I know something about these coolers. First off, they do the job. They cool a cellar of the size recommended and provide the proper humidity by allowing some of the water to evaporate from the base where it is collected. Excess water is drained by means of a tube that is set a little above the ideal water collection depth.
That's a good design, but could use some improvement in its application. To use the overflow drain, you have to pull it out until it clicks into place (which is not really obvious). The tubing plugged up on my previous unit after almost five years, and the only way to clean it was to push a thin screw driver up the tube. Unfortunately, it broke the tubing lose and it was close to impossible to get it back into the unit and set at the right depth. They need to find a better way to attach the tube to the unit and to allow access for cleaning.

Since they are made in California, I'm sure these coolers are designed for fairly low humidity. My first two were installed in California and they worked forever without any problem. I now live in the Gulf South, where there is excessive humidity, and the unit works really hard to get that water out of the air. It does the job, as I said, but you really need to keep an eye on it or it can fill up with water and run all over the cellar.

The unit is quite heavy (80 lbs) and the recommendation is to mount it up near the ceiling (so the cool air drops). The problem is that at 80 lbs, it is a bear to get it up high without two people. My problem is that the area in the cellar is confined and room for only one person. I had to rig up a heavy hook in the ceiling (attached to joists in the attic) and use a block and tackle to get the unit to the right height. It seems that they could build these things with a couple of eye bolts or hooks to attach a hoist for easy handling.

One last thing: My most recent cooler only lasted five years. I'm sure that was due to the hard work it had to do with the afore mentioned humidity, but I would think that is a pretty short life span.

Overall, I am satisfied with these coolers (after all, I did buy another), but some minor improvements as mentioned above, would be very helpful.

I've been using Breezaire units, among other brands, since 1987.
They aren't pretty but they have been the most reliable for me and my customers; the "best bang for the buck".
Over the years they have tweaked and improved their goods for what has to be the scariest aspect of a wine room over the long term.
What's new to me is the great level of service that I have received from the Beverage Factory.

get the bottle probe

I've had this unit for months now and initially, i kept running into issues with the unit shutting off. Apparently when the air on the exhaust side gets above a certain temperature, the unit shuts off and needs to be reset. If you get the bottle probe, it runs off the liquid temperature inside your bottles and the liquid temperature changes a lot slower than air temperature so it runs more efficiently. It used to try and cycle a lot more and since i put the bottle probe in there, it doesn't cycle as often and the temperature seems to hold a lot better. I've been real happy with the performace of the unit since then.

This unit is equipped with a Pull-down Drain tube to prevent condensate overflow. To temporarily drain excess amounts of condensate engage the drain tube and provide a receptacle or drain to receive the excess condensate.
