Pre-gelatinized corn flakes give a higher yield and a more trouble-free brew than a conventional flaked corn and can be used as a cereal adjunct. It contributes alcohol but little flavor, imparting a roundness, sparkle and golden quality. The flaked maize has been degermed (the oil removed), eliminating rancidity, producing a drier, crisp beer with a mild, less malty flavor. When using this as an adjunct, it will produce a lighter color in the finished beer without lowering the original gravity.
