Cote du Blanc Wine Yeast emphasizes fruit character in both red and white wines making it an excellent choice for fruit wines. Cote du Blanc Wine Yeast is a low foaming, slower speed fermenter with low alcohol tolerance. If fermented at cooler temperatures it will not ferment to dryness producing a sweeter wine with some residual sugar. It is recommended for Chardonnay, Riesling, mead and cider. For the production of Chardonnay use in conjunction with yeast nutrient.
